60 second #paleo – Cacao and Almond Squares

Ingredients:

  • 85g Cacao Powder
  • 150g Melted Cacao Butter
  • 240ml Agave Syrup
  • 70g Coconut Oil
  • 40ml of Almond Milk
  • 1tsp Vanilla Powder
  • 85g Almonds

 

Method:

  • Place all ingredients except nuts into a blender and blend until smooth.
  • Stir in chopped almonds.
  • Pour mixture into grease proof tin
  • Place into a freezer for 1 hour.
  • Chop into squares with sharp knife

 

Chocolate Date Recipe

60 Second #Paleo – A Date with Chocolate

Ingredients:

 

100g Organic Medjool Dates (Pitted)

500g Raw Dark Chocolate

250g Organic Peanut/Almond Butter

1tsp Hymilain  Sea Salt

Method:

 

Step 1. Melt 450g of Chocolate in a Bain Marie to a max temperature of 45 Degrees C.

Step 2. Temper Chocolate by adding the additional Chocolate and allowing to cool down to 32 Degrees C

Step 3. Pour chocolate into mold and allow to sit for 30-60 seconds to allow a coating around the inside of the mold.

Step 4. Tip the remaining chocolate back into your bowl and allow the chocolate in the mold to set.

Step 5. In the mean time, blend the date and the peanut/almond butter and then add approx 150g of tempered chocolate and blend a little more.

Step 6. Put mixture into a piping bag or freezer bag with the tip cut off and pipe into the chocolate shells.

Step 7. Pour more chocolate on top of the filled shells and allow to set in the fridge for 15 mintues.

Superstar Trainee Chocolatier Wanted

We are currently seeking our second future Chocolatier to work in our small chocolate factory in Ennis.

 

This is a position under the Job Bridge Internship scheme with a view to turning it into a full-time position at the end of the scheme. To be eligible, you must be in receipt of social welfare for a minimum of 3 months. Our Last intern is now in full time employment with us.

 

There is no previous experience required for this position. This is an exciting opportunity for the right candidate. You will be fully trained in Food Safety, HACCP procedures, how to create and temper RAW chocolate bars/pralines/sweets and other confectionary.

 

Your creative side will also be nurtured and encouraged to produce the next big chocolate delight.

 

You must have passion for food, attention to detail and a willingness to learn and work hard.

Roles and Responsibilities

You will be responsible ultimately  for producing Chocolate bars. This includes preparing all the raw materials, following recipes to the gram and wrapping the products ready for shipping. Other responsibilities will include cleaning duties, fulfilling orders and possibly attending events to promote the chocolate.

July Monthly Report

July has been an interesting month for us in Magic Mayan. We officially became a limited company and was our first official month of trading. We went and incorporated the company ourselves. It took a little time and effort and cost about €200. All we needed to do was to write out the constitution and fill in the CRO forms. Now, the forms did come back to us because of a reference to share capital was incorrect and we were missing a signature. But all that is now out of the way and we have a registered company. And it’s a good thing too because we desperately need to open a business bank account which we cannot do without the Certificate of Incorporation.

 

The reason we need to open the bank account? Sales to health stores and direct to customers have gone through the roof. Which is a great complaint!

 

The Aloe Tree in Ennistymon came back to us for 3 large orders and are now top of the leader board for our best stockist. Good job guys on spreading the word and promoting the awesomeness of Raw Chocolate.

 

Ok so here are the figures.

Sales for July: €3,877.34

  • Online Sales: €562.92
  • Invoiced to Health Stores: €3,314.42

Gross Profit: €1,417.34

We decided not to take a wage for the month of July. We are a startup after all! Even though we have turned a profit after our first month, we want to make an investment into some more equipment  (a tempering machine) which will help speed up production. This is more important that than trying to pull money out of the company.

 

We now have enough raw material to get us through the next month of production with probably only a few small purchases, so August will also be an interesting one.

Jo (the writer of the Quirky Cooking blog) uses a ‘thermomix’ to make these treats, but the recipe can be easily adapted for use with any kind of food processor. We adapted her basic recipe by using coconut sugar instead of rapadura, and of course Magic Mayan chocolate instead of Lindt! And we can guarantee that they really do taste as good as they look, if not even better :)

Raw Chocolate Truffle Recipe

We recently made these delicious raw chocolate truffles (dusted in a lovely sprinkling of strawberry powder) and can only say, man or woman, boy or girl, you just have to try these at home!! So here’s the recipe y’all:

 

Ingredients:

1/2 cup cacao powder

1/4 cup carob powder

1 cup cashew nuts

1 cup sunflower seeds

1/2 cup liquid sweetener of choice (e.g. cold pressed honey, agave syrup, coconut nectar etc.)

1 Tablespoon coconut oil (melted)

1 tablespoon lucuma powder

1/2 teaspoon vanilla powder

1/2 teaspoon cinnamon powder

pinch of salt

fruit powder/ desiccated coconut/powder of choice

 

 

First grind/blend the cashews and sunflower seeds together in a blender or food processor. Next add all the other dry ingredients and blend together. Lastly add the liquid sweetener and melted coconut oil and blend in. From the resulting mixture into truffle sized balls, and roll each one in your favourite powder (could also be coconut if that’s your thing). We used strawberry powder as we had it to hand on that day, and we just love the combination of colour and the fruity zing that accompanies these raw chocolate taste bomb sensations!

The recipe above, can of course, be adapted depending on what ingredients you have available, experiment with your own version and see how long they will stay in your fridge for before someone snaffles them all up… nom nom nom!

You know when you bite into something, and instantly you are transported back to another time, a food memory……a taste memory………a special link that connects your life.

It happened to me recently when I was the recipient of some Magic Mayan Chocolate.

That memory was the taste of  crushed peanuts, sprinkled on an ice-cream, bought from the eagerly awaited ice-cream van, in a leafy suburb of London in the early 70′s…a warm, happy memory.

That food memory was awakened  last week, when my teeth sank into the Salted Peanut Pralinés, (one of many flavours), Matthew and Co. make in Kilfenora, Co.Clare. Dense, divine, salty, and that nutty taste that turned back the clock.

This chocolate ticks all the boxes, as you can see from the oh so natural ingredients, handmade with  organic super foods, it’s good for you…

I got my hands on the Salted Pralinés, and the Crazy Caramel bar.

I hid them from my kids, this chocolate was all mine. I have never tasted chocolate so fine before. A ”COMPLETE” taste experience,

Hot Choc Spúnógs are HERE!!

Just like our Hot Choc Spúnógs, this blog post is going to be short and sweet… what can we say?? If you’re not a resident of North Clare and erstwhile patron of the (sadly missed) Blue Frog Cafe, then you probably (almost definitely!) have not yet had the opportunity to try out our Magic Mayan hot chocolate. Well, no need to let that hold you back any longer, as our Hot Choc Spúnógs (for those of you outside of Ireland, these are pronounced spoon-OGUES) are now available from the online shop in 2 flavours, plain and chili (because some like it hot!) What’s more, the packaging (cello bag and wooden spoon) are completely biodegradable. With a bit of luck, we hope to have these new products distributed in shops across Ireland that are already selling the chocolate bars… and Ennistymon, we are working on you ;)
